Skillet Classic Peach Cobbler

INGREDIENTS

6 medium peaches, halved, pitted and sliced

⅓ cup brown sugar

2 tablespoons lemon juice

½ teaspoon cinnamon

¾ cup all-purpose flour

½ cup granulated sugar

½ teaspoon kosher salt

½ cup cold unsalted butter (1 stick), cut into ½ -inch pieces

2 tablespoons whole buttermilk

Vanilla ice cream for serving (optional)


INSTRUCTIONS 

Prepare outdoor grill for direct grilling over medium-low heat.


Spray 10-inch cast-iron skillet with cooking spray.


In a large bowl, toss peaches, brown sugar, lemon juice and cinnamon.


Spread in prepared skillet.


In food processor, pulse flour, granulated sugar and salt until incorporated.


Add butter then pulse until pea-size pieces remain.


Add buttermilk and pulse until incorporated.


Sprinkle over peach mixture.


Place skillet on hot grill rack; cover and cook 30 minutes or until edges are bubbly and top is golden brown, rotating once.


Let stand 5 minutes. Makes about 6 cups.

INGREDIENTS 36 Oreo cookies (1 standard package) 8 oz. cream cheese 12 oz. orange candy melts Black icing INSTRUCTIONS Use a food processor to crush the Oreos into fine crumbs. If you don’t have one, place them in a ziplock bag and crush them with a rolling pin. In a bowl, mix the crushed Oreos with the softened cream cheese until well combined. The mixture should be smooth and dough-like. Roll the mixture into small balls and palace on a parchment-lined baking sheet. Refrigerate or freeze the balls for at least 20-30 minutes until firm. Melt the candy melts and dip each Oreo ball, coating it completely. Use a fork to lift and let excess drip off. Place the coated truffle balls back onto the parchment paper. While the chocolate is still wet, draw on black “basketball” lines with icing. Refrigerate for at least 10-15 minutes or until set.
