Split Pea Soup

INGREDIENTS

1 lb. package dried green split peas, rinsed

1 meaty hambone or 2 cups diced ham

3 carrots, peeled and diced

1 cup chopped onion

1 cup celery and leaves, chopped

2 cloves garlic, minced

2 bay leaves

Salt and pepper to taste

4 cups hot water

2 cups reduced sodium chicken broth


INSTRUCTIONS 

Layer ingredients in slow cooker in the order listed.


Pour in the water and chicken broth. Do not stir.


Cover and cook on high for 4-5 hours or 8-10 hours on low until the peas are soft and the ham is falling off the bone.


Remove and discard bay leaves and ham bone, if used. Mash or blend peas if a smoother consistency is desired.


Serves 8.
