1 ½ lbs. fresh asparagus, lightly steamed
Vinaigrette
½ cup extra virgin olive oil
⅓ cup white wine vinegar
1 tbsp sugar
½ tsp paprika
1 tsp Dijon mustard or ¼ tsp dried mustard
Salt and pepper to taste
INSTRUCTIONS
Arrange asparagus on a serving platter.
Combine vinaigrette ingredients, and shake well to thoroughly mix.
Pour vinaigrette over asparagus just before serving. Serves 8.
